When I sync my smaller capacity iTouch, I use the tabs along the top
of the sync screen & uncheck the various items (audiobooks, photos,
etc.) that I don't want synced in order to provide space for my music
& a couple of new apps. I have also unchecked a number of individual
music tracks when using this particular iPod.
