Sure enough, you can Option-click a bullet. This allows you to do 
pretty much anything to it, including add or remove the shadow 
setting, AND it works on master slides also (for you theme makers who 
need this feature).

I know in the past I had complained because it appeared that Keynote 4 
had removed the ability to have a shadow on the text but not the 
bullet...I just never thought to try selecting JUST the bullet before.

I feel crazy that I didn't realize this was there, so for anyone one 
else who wished this feature was there, it IS. :)

And for those of you who've known all along, please, don't post and 
tell us.
