If you move the folders, then you have to reset the folder location in
the preferences. You doing something wrong indeed; be careful, if the
names or locations aren't set, then iTunes won't find anything.
Ideally, you should check the two options just below the music folder
location setting - then you just add files to iTunes and the program
takes care of putting them where they should go. You shouldn't have to
move files around manually.
