iTunes bases its categories and folders on the ID3 tags in the files, not
the other way round. It is a library app, not just an interface between your
iPod and your computer files.

Having said that, there should be a way to alter the category. It seems that
right-click > Get Info > Info > Genre > Books & Spoken does *not* do what
you or I want!
