Hi Susan:
There are several early strings within the forum that address many issues related to your question - I am thinking around 2500 or thereabouts - these delve into projector/laptop communication issues. Among other, your resolution out, your color profile and your frequency must be set to exactly correspond with that of the projector. 
Such is compounded by the many generations of projectors, and the difficulties of different systems having to learn to "handshake" ( as in fax communications). I fear that there is no simple answer to your query, although I am unsure if Leopard is compounding an already irritating issue.  When I lecture out of state, or abroad, I make it a point to be there 24 hours in advance and request technical support (I alert them in advance what systems I bring with - typically I travel w two laptops - total redundancy),  and most of the time things work fairly soon; It gets trickier abroad where other variables may enter into the equation.  One thing that I have NOT been able to solve myself without tech support is when I format a presentation to a different screen proportion: e.g., 1920  X 640 or something similar (wide triple screen): that is where tech support is invaluable (and for me absolutely necessary).
Sorry I am not more specific - others may be able to address the Leopard issue - I am still running 10.4.9 as I heard there were some Keynote issues w Leopard...I am a 'slow" upgrader, if you catch my drift...
