You should only see this if you have the Soundcheck option checked in
Playback preferences. iTunes analyzes your files, but only plays them
back with this difference if the option is checked in iTunes or if
it's turned on on the iPod.

It could be that after the file has been ripped, iTunes switches to
playing the file, rather than playing from the CD. But I've never
heard this before.
