I have simply deleted the prior iWorks folders without any ill effects - in all honesty, I kept iWorks 08, " just in case", but it was time to delete the others. Perhaps there is a formal uninstall, but I couldn't find it - there are some support files in your library that you can also get rid of, to clear up some space - (not all that much in reality)
