Can you create a screen shot of the text without loss of clarity and then use the ease in/ease out accelerations to control the speed effects?
I don’t think the ease in acceleration can be applied directly to text, but someone please check!

A problem I found w using a text box to scroll is that the variable speed (which make all Keynote builds look so great)- becomes quite noticeable - I assume because it is proportional to the time you set for the builds. Thus, text entry is slower at the beginning, then speeds up, and then slows down again.  IF you can get the timing down somehow, you can work around this by having a LOT of blank space at the beginning and end of the text box.
