You can set a Category by using the tag value ITUNESPODCASTCATEGORY
Use a MP3 Editor such as Mp3Tag and in the extended tags enter
ITUNESPODCASTCATEGORY and use Sporting Events for the value.

I don't see anyplace in iTunes that allows you to set the category through
iTunes.
