Best quality: Apple Lossless but you will use about 5 MB/min (compared
with CD's 10 MB/min).
Most efficient: AAC at 128 k gives good quality at about 1 MB/min.
This is the default in iTunes.
Most compatible: MP3, which will play on the widest possible selection
of devices, including iPods of course. The setting is up to you but I
find that 160 k VBR gives good quality at about 1.4 MB/min.
You set this in Preferences > Advanced > Importing.
