I'm not sure about the Album Artist, but the Cooder, Ry change is easy.

In iTunes, select all the Ry Cooder tracks then right-click > Get Info.
Change the Artist from Ry Cooder to Cooder, Ry. These amended tracks will
sync to your iPod next time you connect it.

I've done this for all my artists.
