iTunes syncs the iPod's Contacts with OS X Address Book and the Calendar
with iCal. IIRC it uses Outlook on Windows.

You can put other files on the iPod after enabling Disk Mode. You can then
put files in Notes but it seems that only simple text is supported.

Mines a 4G 20 GB. I don't know about the later ones.
